Brewing our special sake in a new unique way “ILLUMINA”

Once you step into Nishibori’s Brewery, you will be surprised at the unique sake brewing operation!
We have been working on a special way of brewing a sake using LED light.
It is normally taboo to use light when it comes to brewing sake; however, we have made a bold decision to turn a negative factor into a positive one.
This unique idea has been provided from inspiration regarding the way of lettuce hydroponic gardens and based on the research example that microorganism (kobo yeast and koji mold) are encouraged by their activity with LED light.

Taking advantage of its special properties of the transparent tanks it can be used for managing the fermentation process by using LED light 24 hours per day and continuing for one month.
A light with long wave encourages the fermentation actively and makes a dry sake with sour taste.

On the other hand, light with a short wave suppresses the fermentation process and makes a sweet sake with fruity taste.
We launch this unique version of sake as our ILLUNINA brand on a regular basis.
We never stop challenging sake brewing with new and exciting innovations.

Be the lucky person to taste the first brew of Jap Be the lucky person to taste the first brew of Japanese Sake this season, in the middle of brewing.

Our company holds a special Japanese sake event every year and has kept doing it for more than 20 years.
This annual event called “Hatsu shibori no kai”(The first brew of the season)will be held twice in December,2021 (December 4th and 25th)

Not only for local customers but also many come from far distances who look forward to joining this event.

The Brewing technique and ideology of our company are inherited by Tsugueda Toji from the past. 
He always remembered his beginners mindset and did his best.

He was never satisfied with his success in the past and always tried to inspire himself to improve sake in the future. 

He studied and worked twice as hard as anyone else, and produced excellent results. Therefore, everyone is impressed with his great humanity and hard work as they respected him totally.

His attitude toward sake making influenced us greatly.

Our products are made based on special technique from the greatest sake master named “Tsugueda” and his technique was passed on us to produce our unique products.
※Toji [master brewer] is the chief executive of production and overseas the team of brewery workers. 

“Tsugueda Toji “worked with us since 2000.
He was from the biggest school of “Nanbu” and he was only Toji received the special top award .
He worked passionately till he died at the age of 86 and he was introduced as the oldest Toji in the book.

Our products are affected by his belief and values very much.

Our company has introduced the unique fermentation process using the clear tank, so that the fermentation process can be observed for the
first time in Japan.

In the past, the enamel tank was used, where only the surface of fermentation could be observed, however, we can now observe the whole process of fermentation through the transparent tank and adjust it along with yeast which moves delicately and freely within the tank.

This unique process gives a stress free environment for “Kobo(yeast)” and the natural circulation makes a meticulous management of the fermentation process.

The story of “I MY ME Kin no Junmai-shu(Golden p The story of “I MY ME Kin no Junmai-shu(Golden pure rice sake)”
It took 13 years has been spent before the first Japanese special sake, made from red(brown) and green ancient rice was launched!!

In general, white sake brewing rice is used to make Japanese sake, however, our company has been successful in making something really special.

We focused on local ancient rice which is cultivated in Oyama City.
This is rich in nutrients and well balanced with sweet and sour flavours but the price is high due to its scarcity value.

It has been cultivated in Japan for more than a 1,000 years of history
Japanese sake as well as rice are strongly related to Japanese culture, the ancient rice used to be offered to the Nikko Tosho-gu shrine, which a Shinto shrine is built to enshrine Tokugawa Ieyasu the first shogun of the Tokugawa shogunate.

After many trials and errors, we found the golden ratio of rice mixings to make this special sake.

Our sake keeps up with the times…

Nishibori Sake Brewery is located at Oyama City in Tochigi Prefecture, and was founded in 1872.
Genjiro Nishibori, founder of the brewery, was fascinated by the clear natural water from the Nikko mountain range and the rich rice fields so he started to make Japanese Sake.

There are four historical buildings such as “Nagaya-mon(Nagaya gate)”,”Shikomigura(Mashing room)”,”Binzumeba(Bottling factory)” and “Entotsu(chimney)” which are registered as National Tangible Cultural Property.

The oldest historical building is still utilized for making sake.
The power of “House yeast” which exists in breams or pillars in the mashing room creates a unique taste.
The buildings as well as the atmosphere are one of the important elements for making Japanese Sake.

As for fermentation, a widely opened tank is used to absorb invisible microorganism from the air.

Our company plans to keep making our sake with the wisdom of our ancestors along with the proven history that we cherish.

What is “Mongai Fushutsu”?

”Mongai Fushutsu” is our representative Japanese sake brand, which means “Secret Recipe” and it is not allowed to be taken outside of the Brewery.

That is because it is made by excellent sake workers with sophisticated skills, with traditions they hand down from generation to generation.

They are also produced secretly at the far side of the “Nagaya-mon(Nagaya gate) that was designated as national tangible cultural property.

Since they are still consumed at the particular area, they are still called a “Secret” or “Highly valuable“ sake. 
That is why “Mongai Fushutsu Junmai Ginjo 55” is the one of the best sellers in our brewery.

Characteristic:
Rich umami taste goes well perfectly with any meal.
The first taste is fruity but the aftertaste is dry and crisp.
